Dive into the bold and aromatic flavors of Gaeng Kua Kling, a Southern Thai dry curry that's sure to impress!
**Ingredients**:
- 400g meat (pork, beef, or chicken), thinly sliced
- 2 tbsp red curry paste
- 2 tbsp vegetable oil
- 1/2 cup sliced bell peppers
- 1/2 cup green beans, cut into 2-inch pieces
- 1/2 cup Thai eggplant, sliced
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp palm sugar
- 1/2 cup chopped Thai basil leaves
- 2-3 kaffir lime leaves, torn (optional)
- Fresh cilantro for garnish
**Instructions**:
1. Heat vegetable oil in a large pan or wok over medium heat.
2. Add red curry paste and stir-fry until fragrant.
3. Add the sliced meat and cook until browned and cooked through.
4. Toss in the bell peppers, green beans, and Thai eggplant. Stir-fry until vegetables are tender-crisp.
5. Season with fish sauce, soy sauce, and palm sugar. Stir well to combine.
6. Add chopped Thai basil leaves and torn kaffir lime leaves (if using). Stir until the basil is wilted and fragrant.
7. Remove from heat and garnish with fresh cilantro.
8. Serve hot with steamed rice or rice noodles and enjoy the aromatic and spicy Gaeng Kua Kling!
