Ingredients:
- 1 whole turkey (about 10-12 lbs)
- 1 1/2 cups rice (long-grain or short-grain)
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1/2 cup olive oil
- 1/2 cup pine nuts (optional)
- 1/2 cup currants or raisins (optional)
- 1 tbsp dried oregano
- 1 tsp ground cinnamon
- Salt and pepper to taste
- 1 lemon, juiced
- 1/2 cup fresh parsley, chopped
- 2 cups chicken or turkey broth (for roasting)
Instructions:
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a pan, sauté the onion and garlic until softened, then add the rice, pine nuts, currants, oregano, cinnamon, salt, and pepper. Stir in 3 cups of water, bring to a boil, then simmer until the rice absorbs the liquid and is tender. Let cool.
- Stuff the turkey with the rice mixture, securing the opening with kitchen twine.
- Rub the turkey with olive oil, lemon juice, salt, and pepper, then place in a roasting pan.
- Pour broth into the pan and cover the turkey with foil. Roast for 2-3 hours, basting occasionally.
- Remove the foil in the last 30 minutes to brown the turkey, then roast until the internal temperature reaches 165°F (75°C).
- Let the turkey rest before carving and serving.
