Gambas al Ajillo (Garlic Shrimp)

Are you a shrimp lover? I just discovered a Spanish-style shrimp recipe and it's easy to make! Here's the recipe.

Ingredients:​

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 4 cloves garlic, thinly sliced
  • 1-2 small dried red chilies, crushed (optional, for heat)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup dry white wine
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Crusty bread, for serving

Instructions:​

  1. Heat the Olive Oil:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the sliced garlic and dried chilies (if using) and sauté until the garlic is golden and fragrant, about 1-2 minutes. Be careful not to burn the garlic.
  2. Cook the Shrimp:
    • Increase the heat to medium-high.
    • Add the shrimp to the skillet, spreading them out in a single layer.
    • Cook for about 2 minutes on one side until they start turning pink.
  3. Add Wine and Lemon Juice:
    • Flip the shrimp and add the white wine and lemon juice.
    • Continue cooking for another 2-3 minutes until the shrimp are cooked through and opaque.
    • Season with salt and pepper to taste.
  4. Garnish:
    • Remove the skillet from the heat.
    • Sprinkle the chopped parsley over the shrimp and stir to combine.
  5. Serve:
    • Serve the Gambas al Ajillo hot, with crusty bread on the side to soak up the delicious garlic-infused oil.
