- 2 lbs beef, cubed
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon ground cinnamon
- 1 teaspoon dried oregano
- 4 cups beef stock
- 1 1/2 cups orzo
- Salt and pepper to taste
- Grated kefalotyri or Parmesan cheese for serving
Instructions:
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat, searing the beef until browned on all sides.
- Remove the beef, lower the heat, and sauté the onion and garlic until softened.
- Stir in the crushed tomatoes, tomato paste, cinnamon, oregano, salt, and pepper. Add the beef back in and pour in the beef stock.
- Cover and simmer on low heat for 1 1/2 hours until the beef is tender.
- Preheat the oven to 375°F (190°C). Stir the orzo into the pot, adding extra stock or water if needed to cover the pasta.
- Bake uncovered for 20-25 minutes until the orzo is cooked, stirring occasionally.
- Sprinkle with grated cheese and serve hot.
