Giouvetsi me Moschari is a Greek classic that brings together tender beef, rich tomato sauce, and orzo for a hearty, one-pot meal that's pure comfort. Here's how to make it:

Ingredients:
  • 2 lbs beef, cubed
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cinnamon
  • 1 teaspoon dried oregano
  • 4 cups beef stock
  • 1 1/2 cups orzo
  • Salt and pepper to taste
  • Grated kefalotyri or Parmesan cheese for serving

Instructions:
  1. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat, searing the beef until browned on all sides.
  2. Remove the beef, lower the heat, and sauté the onion and garlic until softened.
  3. Stir in the crushed tomatoes, tomato paste, cinnamon, oregano, salt, and pepper. Add the beef back in and pour in the beef stock.
  4. Cover and simmer on low heat for 1 1/2 hours until the beef is tender.
  5. Preheat the oven to 375°F (190°C). Stir the orzo into the pot, adding extra stock or water if needed to cover the pasta.
  6. Bake uncovered for 20-25 minutes until the orzo is cooked, stirring occasionally.
  7. Sprinkle with grated cheese and serve hot.
