- 1 cup fresh or frozen blueberries
- 1 tablespoon lemon zest (about 1 lemon)
- 1 large egg
- ½ cup whole milk
- 1 teaspoon vanilla extract
- For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon milk (or as needed for consistency)
Instructions:
- Preheat and Prep:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Mix the Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the Butter:
- Add the cold butter pieces to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Add Blueberries and Lemon:
- Gently fold in the blueberries and lemon zest.
- Combine Wet Ingredients:
- In a separate bowl, whisk together the egg, milk, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
- Shape and Bake:
