I recently made Greek Fasolada, and it was a warm and hearty delight! Often referred to as the "national dish of Greece," this traditional bean soup is not only comforting but also packed with flavors and nutrients. It features a rich tomato base, plenty of vegetables, and, of course, tender white beans. This dish is perfect for any day of the week and makes for an excellent plant-based meal. Here’s how you can prepare this delicious Fasolada at home:
Ingredients:
- For the Soup:
- 1 cup dried white beans (such as cannellini or navy beans), soaked overnight
- 1/4 cup olive oil
- 1 large onion, chopped
- 2-3 cloves garlic, minced
- 2 carrots, diced
- 1 celery stalk, diced
- 1 bell pepper (red or green), chopped
- 1 can (14 oz) diced tomatoes (or 2 fresh tomatoes, chopped)
- 4 cups vegetable broth or water
- 1-2 teaspoons tomato paste (optional, for richer flavor)
- 1-2 teaspoons dried oregano
- Salt and pepper, to taste
- Juice of 1 lemon (for serving)
- Fresh parsley or basil, chopped (for garnish)
Instructions:
1. Prepare the Beans:
- Drain and rinse the soaked beans. In a large pot, cover them with fresh water and bring to a boil. Cook for about 10 minutes, then reduce the heat, cover, and simmer until the beans are tender (about 30-40 minutes). Drain and set aside.
2. Sauté the Vegetables:
- In the same pot, heat the olive oil over medium heat. Add the chopped onion, and sauté until translucent, about 5 minutes. Then add the garlic, carrots, celery, and bell pepper, cooking for another 5-7 minutes until softened.
3. Add the Tomatoes and Spices:
- Stir in the diced tomatoes and tomato paste (if using). Add the cooked beans back into the pot along with the vegetable broth, oregano, salt, and pepper. Bring to a simmer.
4. Cook the Soup:
- Let the soup simmer for about 20-30 minutes, allowing the flavors to meld. Adjust the seasoning as needed.
5. Serve:
- Serve the Fasolada hot, drizzled with a little more olive oil and a squeeze of fresh lemon juice. Garnish with chopped parsley or basil for a fresh touch.
