Ingredients:

  • 1 whole chicken (about 4-5 pounds), giblets removed
  • 2 lemons, divided
  • 4 cloves garlic, minced
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1 onion, quartered
  • 4-6 garlic cloves, peeled
  • Fresh oregano sprigs, for garnish (optional)
Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Zest and juice one lemon. In a small bowl, combine the lemon zest, lemon juice, minced garlic, chopped oregano, chopped rosemary, chopped thyme, and olive oil. Season with salt and pepper to taste.
  3. Rinse the chicken under cold water and pat dry with paper towels. Place the chicken in a roasting pan or baking dish.
  4. Carefully loosen the skin of the chicken by gently running your fingers between the skin and the meat, being careful not to tear the skin.
  5. Rub the lemon herb mixture all over the chicken, including under the skin and inside the cavity.
  6. Cut the remaining lemon into wedges and place them inside the cavity of the chicken, along with the quartered onion and peeled garlic cloves.
  7. Tie the legs of the chicken together with kitchen twine and tuck the wing tips under the body of the chicken.
  8. Roast the chicken in the preheated oven for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the juices run clear and the internal temperature reaches 165°F (75°C) when measured with a meat thermometer inserted into the thickest part of the thigh.
  9. If the skin starts to brown too quickly, cover the chicken loosely with aluminum foil.
  10. Once the chicken is cooked through, remove it from the oven and let it rest for 10-15 minutes before carving.
  11. Garnish the Greek-Inspired Lemon and Herb Roast Chicken with fresh oregano sprigs, if desired.
