- In a bowl, combine olive oil, minced garlic, lemon zest, lemon juice, chopped fresh oregano, chopped fresh rosemary, chopped fresh parsley, dried thyme, salt, and pepper to make the marinade.
- Add chicken chunks to the marinade and toss until evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld together.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.
- Preheat the grill to medium-high heat.
- Thread marinated chicken chunks onto skewers, leaving a little space between each piece.
- Place the chicken skewers on the preheated grill and cook for 4-5 minutes per side, or until the chicken is cooked through and has grill marks.
- While the chicken is grilling, prepare the Greek salad by combining cucumber, tomato, red onion, olives, and feta cheese in a bowl. Toss with olive oil, lemon juice, salt, and pepper to taste.
- Warm the pita bread on the grill for a minute or two on each side.
- Serve the Greek-Inspired Lemon Herb Chicken Souvlaki hot, with warmed pita bread, tzatziki sauce, Greek salad, and lemon wedges on the side.
