- 2 large eggplants, sliced lengthwise
- 500g ground lamb or beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 can (400g) chopped tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten
- Pinch of nutmeg
- Olive oil, for frying
- Preheat your oven to 200°C (390°F).
- Heat some olive oil in a large frying pan over medium heat. Add the sliced eggplants and cook until golden brown on both sides. Remove from the pan and set aside.
- In the same pan, add a bit more olive oil if needed, then add the chopped onion and garlic. Cook until softened.
- Add the ground lamb or beef to the pan and cook until browned. Drain any excess fat.
- Stir in the chopped tomatoes, tomato paste, dried oregano, ground cinnamon, salt, and pepper. Simmer for about 10 minutes, until the sauce thickens.
- In a separate saucepan, melt the butter over medium heat. Stir in the flour to create a roux, then gradually whisk in the milk until smooth. Cook until the sauce thickens, then remove from heat. Stir in the grated Parmesan cheese, beaten egg, and a pinch of nutmeg.
- To assemble the moussaka, layer half of the cooked eggplant slices in the bottom of a greased baking dish. Top with the meat mixture, then layer the remaining eggplant slices on top. Pour the cheese sauce over the top.
- Bake in the preheated oven for 30-40 minutes, or until golden and bubbly.
- Allow the moussaka to cool slightly before slicing and serving. Enjoy your taste of Greece!
