Ingredients:

  • 2 large eggplants, sliced lengthwise
  • 500g ground lamb or beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 can (400g) chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • Pinch of nutmeg
  • Olive oil, for frying
Instructions:

  1. Preheat your oven to 200°C (390°F).
  2. Heat some olive oil in a large frying pan over medium heat. Add the sliced eggplants and cook until golden brown on both sides. Remove from the pan and set aside.
  3. In the same pan, add a bit more olive oil if needed, then add the chopped onion and garlic. Cook until softened.
  4. Add the ground lamb or beef to the pan and cook until browned. Drain any excess fat.
  5. Stir in the chopped tomatoes, tomato paste, dried oregano, ground cinnamon, salt, and pepper. Simmer for about 10 minutes, until the sauce thickens.
  6. In a separate saucepan, melt the butter over medium heat. Stir in the flour to create a roux, then gradually whisk in the milk until smooth. Cook until the sauce thickens, then remove from heat. Stir in the grated Parmesan cheese, beaten egg, and a pinch of nutmeg.
  7. To assemble the moussaka, layer half of the cooked eggplant slices in the bottom of a greased baking dish. Top with the meat mixture, then layer the remaining eggplant slices on top. Pour the cheese sauce over the top.
  8. Bake in the preheated oven for 30-40 minutes, or until golden and bubbly.
  9. Allow the moussaka to cool slightly before slicing and serving. Enjoy your taste of Greece!
