I made this Greek yogurt chicken salad for lunch, and it's such a healthier twist on the classic! Creamy, tangy, and super satisfying.

Ingredients:- 2 cups cooked chicken, shredded or diced
- 1/2 cup plain Greek yogurt
- 1 tbsp Dijon mustard
- 1/2 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1 tbsp lemon juice
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- In a large bowl, mix the Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
- Add the shredded chicken, celery, red onion, and parsley. Stir to combine.
- Serve chilled, either on its own, in a sandwich, or wrapped in lettuce leaves.
