- 1 cup sweetened red bean paste
- 1 cup glutinous rice flour
- 1 teaspoon green tea powder (matcha)
- 1 cup water
- ¼ cup white sugar
- ½ cup cornstarch (for rolling out the dough)
- Prepare the Red Bean Paste:
- Wrap the sweetened red bean paste in aluminum foil and freeze until solid, for at least 1 hour.
- Prepare the Mochi Dough:
- In a microwave-safe bowl, thoroughly mix the glutinous rice flour and green tea powder.
- Stir in water and sugar until the mixture is smooth.
- Cover the bowl with plastic wrap and microwave for 3 minutes and 30 seconds.
- Remove from microwave, stir, and heat again, covered, for an additional 15 to 30 seconds if needed.
- Assemble the Mochi:
- Dust a work surface with cornstarch.
- Take about 2 tablespoons of the hot rice flour mixture and roll it into a ball.
- Flatten the ball and place one frozen red bean paste ball in the center.
- Pinch and press the dough around the bean paste until it's completely covered.
- Sprinkle with additional cornstarch to prevent sticking.
- Finish and Serve:
- Place the mochi, seam-side down, in a paper muffin liner to prevent sticking.
- Repeat the process to make the remaining mochi.
