Grilled Skirt Steak Fajitas
Ingredients:Marinade:
- 1/2 cup soy sauce
- 1/2 cup lime juice
- 1/2 cup canola oil
- 1/4 cup packed brown sugar
- 1 tbsp chili powder
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp freshly ground black pepper
- 2 lbs skirt steak, trimmed and cut
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 large green bell pepper, sliced
- 1 white or yellow onion, sliced
- 12 to 16 tortillas, warmed
- Guacamole, pico de gallo, sour cream, shredded cheese, salsa (optional)
- Combine marinade ingredients, set aside 1/2 cup for veggies.
- Marinate steak for 3-10 hours.
- Toss peppers and onion with reserved marinade.
- Grill steak until desired doneness, rest for 10-15 mins.
- Grill veggies until charred and softened.
- Slice steak and serve with veggies, tortillas, and toppings.
