Here's what you'll need:
- 1 block halloumi cheese, cut into 1-inch cubes
- 1 seedless watermelon, cut into 1-inch cubes
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 1/2 cup fresh mint leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 1 clove garlic, minced
- 1/4 cup olive oil
- Preheat your grill to medium-high heat. Lightly oil the grates.
- In a small blender or food processor, combine the mint leaves, Parmesan cheese, pine nuts, garlic, and olive oil. Blend until smooth. This is your mint pesto!
