- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup white sugar
- 1 cup coconut milk
- 1 cup whole milk
- 1/2 cup white sugar
- 1/3 cup cornstarch
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp white sugar
- 1 cup fresh or frozen pineapple chunks

- Let's start with the crust! Preheat your oven to 350°F. Mix together the graham cracker crumbs, melted butter, and sugar until it resembles coarse crumbs. Press the mixture firmly into a 9-inch pie dish, going up the sides as well. Bake for 8 minutes, then let it cool completely.
- Time for the haupia filling! In a saucepan, whisk together the coconut milk, whole milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles. Remove from heat and stir in the vanilla extract.
- Pour the haupia filling into the cooled pie crust and smooth out the top with a spatula or the back of a spoon. Refrigerate for at least 2 hours (or overnight if you can wait that long) to allow it to set.
