- 2 boneless, skinless chicken breasts, diced
- 3 medium potatoes, peeled and diced
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 4 eggs
- Fresh parsley or chives for garnish
- Start by heating a large skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is hot, add the diced chicken breasts. Cook until the chicken is golden brown and cooked through, about 8-10 minutes. Remove the cooked chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the diced potatoes and cook until they are golden brown and crispy, about 10-12 minutes. Stir occasionally to ensure even cooking.
- Once the potatoes are crispy, add the diced onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
- Return the cooked chicken to the skillet and stir to combine with the vegetables. Season the mixture with salt, pepper, smoked paprika, and dried thyme. Adjust the seasoning according to your taste.
- Using a spoon, create four wells in the mixture for the eggs. Crack an egg into each well. Cover the skillet and cook until the eggs are set to your desired doneness, about 5-7 minutes for runny yolks.
- Once the eggs are cooked, remove the skillet from the heat. Garnish the chicken and potato breakfast skillet with fresh parsley or chives for a pop of color and flavor.
