Indulge in the deliciously tender Hirata Buns, filled with juicy pork and wrapped in soft, fluffy steamed buns.
**Ingredients:**
- 2 cups all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup warm milk
- 1/4 cup warm water
- 1 tbsp active dry yeast
- 1 tbsp vegetable oil
**For the filling:**
- 1/2 lb ground pork
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp rice wine or dry sherry
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 2 green onions, chopped
- 1 tbsp sesame oil
**Instructions:**
1. In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes.
2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
3. Add the yeast mixture, warm milk, and vegetable oil to the dry ingredients and knead until smooth. Let the dough rise in a warm place for 1 hour or until doubled in size.
4. Meanwhile, mix the ground pork with soy sauce, hoisin sauce, rice wine, ginger, garlic, green onions, and sesame oil.
5. Divide the dough into 8 equal pieces and roll each piece into a thin circle.
6. Place a spoonful of pork filling in the center of each dough circle and gather the edges to seal.
7. Place the buns on parchment paper squares and steam over boiling water for 15-20 minutes.
