This recipe is designed for the Instant Pot, ensuring that your meal is ready in a fraction of the time it would take using traditional cooking methods. The Instant Pot not only speeds up the cooking process but also enhances the flavors, making your Honey Chicken irresistibly delicious.




Ingredients:
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1/2 cup honey
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 2 tbsp rice vinegar or apple cider vinegar
- 3 cloves garlic, minced
- 1 tsp ginger, minced
- 1/4 cup water
- 2 tbsp cornstarch
- 2 tbsp water (for cornstarch slurry)
- Sesame seeds (for garnish)
- Green onions, sliced (for garnish)
Instructions:
- Sauté the Chicken: Set the Instant Pot to 'Sauté' and add olive oil. Once hot, add the chicken pieces and cook until browned on all sides. Remove and set aside.
- Prepare the Sauce: In a bowl, whisk together honey, soy sauce, ketchup, vinegar, garlic, ginger, and water.
- Combine and Cook: Return the browned chicken to the Instant Pot and pour the sauce over it. Stir to coat the chicken evenly. Close the lid, set the valve to 'Sealing,' and cook on 'Manual' or 'Pressure Cook' on high pressure for 5 minutes.
- Release Pressure: Once the cooking cycle is complete, perform a quick release of the pressure. Open the lid carefully.
- Thicken the Sauce: Set the Instant Pot to 'Sauté' again. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir the slurry into the pot and cook, stirring frequently, until the sauce thickens.
- Serve: Turn off the Instant Pot. Serve the Honey Chicken over rice or noodles, garnished with sesame seeds and sliced green onions.
