Ingredients:
For the pork chops:
- 4 bone-in pork chops
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 4 slices bacon, diced
- 2 apples, peeled, cored, and diced
- 1 small onion, diced
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar
- Salt and pepper, to taste
- Preheat your oven to 375°F (190°C).
- Season the pork chops with salt and pepper on both sides.
- In a small bowl, mix together the honey, Dijon mustard, and whole grain mustard.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork chops for 2-3 minutes on each side until golden brown.
- Brush the honey mustard glaze over the pork chops.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the pork chops are cooked through.
- While the pork chops are cooking, prepare the apple bacon chutney. In a separate skillet, cook the diced bacon until crispy. Remove from the skillet and set aside.
- In the same skillet, add the diced apples and onion. Cook until softened, about 5 minutes.
- Stir in the apple cider vinegar and brown sugar. Cook for an additional 2-3 minutes until the mixture thickens slightly.
- Add the cooked bacon back to the skillet and season with salt and pepper to taste.
- Serve the honey mustard glazed pork chops with a generous spoonful of apple bacon chutney on top.
