Hey guys! I'm thrilled to share a delicious and refreshing recipe for Horchata, a beloved Mexican beverage that's sure to delight your taste buds. It's creamy, sweet, and satisfying to sip pairing with your favorite spicy foods!

Ingredients:

  • 1 cup long-grain white rice
  • 2 cinnamon sticks
  • 4 cups water
  • 1/2 cup granulated sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 2 cups milk (you can use cow's milk or a plant-based alternative like almond milk)
  • Ground cinnamon, for garnish (optional)
Instructions:

  1. Rinse the rice under cold water until the water runs clear.
  2. In a blender, combine the rinsed rice, cinnamon sticks, and 2 cups of water. Blend until the rice and cinnamon sticks are broken down into a coarse mixture.
  3. Add the remaining 2 cups of water to the blender and blend again until well combined.
  4. Pour the rice mixture into a large bowl and let it sit at room temperature for at least 4 hours, or preferably overnight. This allows the flavors to meld and the rice to soften.
  5. After soaking, strain the rice mixture through a fine mesh sieve or cheesecloth into a pitcher, pressing down on the solids to extract as much liquid as possible.
  6. Stir in the granulated sugar and vanilla extract until the sugar is dissolved.
  7. Add the milk to the pitcher and stir until well combined.
  8. Chill the Horchata in the refrigerator until cold.
  9. Before serving, stir the Horchata well as it may separate while chilling.
  10. Pour the Horchata into glasses filled with ice cubes.
  11. Sprinkle ground cinnamon on top for an extra burst of flavor, if desired.
  12. Serve and enjoy this creamy, sweet, and refreshing Horchata!
