Italian Wedding Soup is one of those comforting dishes that feels like a warm hug in a bowl. I recently made it, and the mix of tender meatballs, fresh greens, and tiny pasta in a savory broth was just perfect. It’s simple, hearty, and full of flavor—perfect for a cozy dinner.

Ingredients:
  • 1 lb ground beef or pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 1 cup small pasta (like acini di pepe)
  • 2 cups fresh spinach or escarole
  • 1 cup diced carrots
  • 1 cup diced onions
  • 1/2 cup diced celery
Instructions:
  1. In a bowl, mix the ground meat, breadcrumbs, Parmesan, egg, garlic powder, salt, and pepper. Form into small meatballs.
  2. In a large pot, bring the chicken broth to a boil. Add the carrots, onions, and celery. Let it simmer for about 10 minutes.
  3. Gently add the meatballs to the broth and cook for another 10 minutes.
  4. Stir in the pasta and cook until it’s tender, about 8 minutes.
  5. Add the spinach or escarole just before serving and let it wilt in the hot soup.
This soup is so easy to make, and it’s one of those recipes that warms you from the inside out. Serve it with some crusty bread, and you’ve got a meal that’ll have everyone coming back for seconds. Enjoy! 🥣✨
