Italian Wedding Soup is one of those comforting dishes that feels like a warm hug in a bowl. I recently made it, and the mix of tender meatballs, fresh greens, and tiny pasta in a savory broth was just perfect. It’s simple, hearty, and full of flavor—perfect for a cozy dinner.
Ingredients:
- 1 lb ground beef or pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp garlic powder
- Salt and pepper to taste
- 6 cups chicken broth
- 1 cup small pasta (like acini di pepe)
- 2 cups fresh spinach or escarole
- 1 cup diced carrots
- 1 cup diced onions
- 1/2 cup diced celery
- In a bowl, mix the ground meat, breadcrumbs, Parmesan, egg, garlic powder, salt, and pepper. Form into small meatballs.
- In a large pot, bring the chicken broth to a boil. Add the carrots, onions, and celery. Let it simmer for about 10 minutes.
- Gently add the meatballs to the broth and cook for another 10 minutes.
- Stir in the pasta and cook until it’s tender, about 8 minutes.
- Add the spinach or escarole just before serving and let it wilt in the hot soup.
