I've been craving Korean food lately, so I tried making this satisfying dish called Jangjorim Rice Bowl. 🍛 Here's the recipe in case you want to try making it:

Ingredients:​

  • For the Jangjorim (Soy-Braised Beef):
    • 1 lb beef brisket or flank steak
    • 4 cups water
    • 1/2 cup soy sauce
    • 1 tablespoon sugar (adjust to taste)
    • 1 tablespoon honey or corn syrup (optional for a sweeter flavor)
    • 3-4 garlic cloves, smashed
    • 1 small onion, quartered
    • 2-3 dried red chili peppers (optional, for a bit of heat)
    • 1 tablespoon sesame oil
    • 2 boiled eggs, peeled (soft or hard-boiled)
  • For the Rice Bowl:
    • 2-3 cups cooked rice (warm)
    • Fresh vegetables (blanched spinach, shredded lettuce, or cucumber slices)
    • Pickled radish or kimchi (optional)
    • Nori (seaweed) strips for garnish
    • Sesame seeds for garnish
    • Green onions, chopped for garnish
    • Gochujang (Korean chili paste) or chili oil (optional, for extra spice)

Instructions:​

  1. Prepare the Beef:
    • Rinse the beef and cut it into large chunks for easy cooking. Place the beef in a pot, cover with water, and bring to a boil. Let it boil for 5-10 minutes, then discard the water and rinse the beef to remove impurities.
  2. Cook the Jangjorim:
    • In a clean pot, add 4 cups of water, the soy sauce, sugar, smashed garlic, quartered onion, and dried red chili peppers. Add the rinsed beef back into the pot.
    • Bring the mixture to a boil, then reduce to a simmer. Cover and cook for about 1.5 to 2 hours, or until the beef is tender and easily shreddable.
    • After the beef has cooked, remove it from the pot and shred it into bite-sized pieces using a fork. Return the shredded beef to the pot.
    • Add the peeled boiled eggs to the pot and simmer for another 10 minutes to let the eggs soak up the flavorful broth.
    • Drizzle sesame oil over the jangjorim before serving.
  3. Assemble the Rice Bowl:
    • In a bowl, add a generous scoop of warm rice.
    • Place some shredded jangjorim beef on top of the rice and arrange sliced boiled egg halves alongside it.
    • Add fresh vegetables like blanched spinach, shredded lettuce, or cucumber slices for a crunchy contrast.
    • Garnish with nori strips, sesame seeds, and chopped green onions.
    • Add a spoonful of gochujang or a drizzle of chili oil if you prefer some heat.
  4. Serve and Enjoy:
    • Mix everything before eating, or enjoy each component separately. The combination of the savory, soy-braised beef and the fresh vegetables makes for a balanced and satisfying lunch.
