Ingredients:

  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

For the Chicken:
  • 1 1/2 pounds boneless, skinless chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil
  • Toasted sesame seeds, for garnish
  • Thinly sliced green onions, for garnish
Instructions:
  1. In a small saucepan, combine soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger to make the teriyaki sauce. Bring the mixture to a simmer over medium heat.
  2. If you prefer a thicker sauce, mix cornstarch with a tablespoon of water to make a slurry. Stir the slurry into the simmering sauce, and cook for a few minutes until the sauce thickens slightly. Remove from heat and set aside.
  3. Season chicken thighs with salt and pepper on both sides.
  4. Heat vegetable oil in a large skillet or grill pan over medium-high heat. Add the seasoned chicken thighs to the pan, and cook for 6-8 minutes on each side, or until golden brown and cooked through.
  5. Once the chicken is cooked, reduce the heat to low and pour the teriyaki sauce over the chicken in the pan.
