Ingredients:
- 1 whole chicken, cut into pieces (or use chicken thighs and drumsticks)
- 4-5 boiled eggs, peeled
- 5-6 cloves garlic, crushed
- 2-3 slices ginger
- 2-3 star anise
- 2-3 cinnamon sticks
- 3-4 tablespoons soy sauce
- 2 tablespoons dark soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sugar
- 1 teaspoon black peppercorns
- 4-5 cups chicken broth (or water)
- 2 tablespoons vegetable oil
- Fresh cilantro, chopped (for garnish)
Instructions:
- Prepare the Chicken:
- In a large pot or Dutch oven, heat vegetable oil over medium heat. Add crushed garlic, ginger slices, star anise, and cinnamon sticks. Stir-fry until fragrant, about 1-2 minutes.
- Braise the Chicken:
- Add the chicken pieces to the pot. Brown the chicken on all sides, about 5-7 minutes.
- Simmer with Sauces and Spices:
- Pour in soy sauce, dark soy sauce, oyster sauce, and sugar. Add black peppercorns. Stir well to coat the chicken with the sauce.
- Add Broth and Simmer:
- Pour in enough chicken broth (or water) to cover the chicken pieces. Bring to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes, or until the chicken is tender and fully cooked.
- Add Boiled Eggs:
- Gently add the peeled boiled eggs to the pot during the last 10-15 minutes of cooking. Allow them to simmer in the flavorful broth to absorb the flavors.
- Serve:
- Transfer Kai Palo to a serving dish. Garnish with chopped fresh cilantro.
