🛒 Ingredients:

  • 1 whole chicken, cut into pieces (or use chicken thighs and drumsticks)
  • 4-5 boiled eggs, peeled
  • 5-6 cloves garlic, crushed
  • 2-3 slices ginger
  • 2-3 star anise
  • 2-3 cinnamon sticks
  • 3-4 tablespoons soy sauce
  • 2 tablespoons dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sugar
  • 1 teaspoon black peppercorns
  • 4-5 cups chicken broth (or water)
  • 2 tablespoons vegetable oil
  • Fresh cilantro, chopped (for garnish)

🍗 Instructions:

  1. Prepare the Chicken:
    • In a large pot or Dutch oven, heat vegetable oil over medium heat. Add crushed garlic, ginger slices, star anise, and cinnamon sticks. Stir-fry until fragrant, about 1-2 minutes.
  2. Braise the Chicken:
    • Add the chicken pieces to the pot. Brown the chicken on all sides, about 5-7 minutes.
  3. Simmer with Sauces and Spices:
    • Pour in soy sauce, dark soy sauce, oyster sauce, and sugar. Add black peppercorns. Stir well to coat the chicken with the sauce.
  4. Add Broth and Simmer:
    • Pour in enough chicken broth (or water) to cover the chicken pieces. Bring to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes, or until the chicken is tender and fully cooked.
  5. Add Boiled Eggs:
    • Gently add the peeled boiled eggs to the pot during the last 10-15 minutes of cooking. Allow them to simmer in the flavorful broth to absorb the flavors.
  6. Serve:
    • Transfer Kai Palo to a serving dish. Garnish with chopped fresh cilantro.
