For the Omelette:​

  • 4 eggs
  • 2 tablespoons water
  • Salt and pepper, to taste
  • Vegetable oil, for frying

  • 250g minced chicken (or pork)
  • 1/2 cup mixed vegetables (carrots, peas, corn), finely chopped
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Fresh cilantro leaves, chopped (optional)

  1. Prepare the Filling:
    • Heat a bit of vegetable oil in a pan over medium heat.

  4. Add the Filling:
    • Spoon half of the cooked filling onto one half of the omelette.
  5. Fold and Serve:
    • Fold the other half of the omelette over the filling to create a half-moon shape.
    • Cook for another minute or two until the omelette is cooked through and golden brown.
  6. Repeat:
    • Repeat the process with the remaining egg mixture and filling to make another stuffed omelette.
