For the Filling (Optional):​

  • Sweet corn kernels
  • Cooked mung beans
  • Grated coconut

For Cooking:​

  • Vegetable oil or coconut oil, for greasing the pan

  1. Prepare the Batter:
    • In a mixing bowl, combine rice flour, tapioca flour, coconut milk, water, salt, and sugar. Mix until smooth and well combined. The batter should have a slightly thick consistency, similar to pancake batter.
  2. Heat the Pan:
    • Preheat a Kanom Krok pan or a similar cast-iron pan over medium heat. Grease the indentations with a little vegetable oil or coconut oil.
  3. Cook the Pancakes:
    • Pour a small amount of batter into each indentation, filling them about halfway full.
    • Add your choice of filling (if using), such as sweet corn kernels, cooked mung beans, or grated coconut, on top of the batter.
  4. Cover and Cook:
    • Cover the pan and let the Kanom Krok cook for about 3-4 minutes, or until the edges become crispy and golden brown, and the center is set.
  5. Flip and Cook the Other Side (Optional):
    • If desired, flip the Kanom Krok using a skewer or small spatula to cook the other side for an additional 1-2 minutes until golden brown.
