  • 2 cups heavy whipping cream
  • 1/2 cup powdered erythritol or your preferred low-carb sweetener
  • 1 teaspoon vanilla extract
  • Optional flavorings: cocoa powder, almond extract, mint extract, etc.
Instructions:
  1. In a mixing bowl, whip the heavy whipping cream until stiff peaks form.
  2. Gently fold in the powdered erythritol and vanilla extract until well combined.
  3. If desired, add any additional flavorings to the mixture and fold in gently.
  4. Transfer the mixture to a freezer-safe container and smooth the top.
  5. Cover the container and freeze for at least 4-6 hours, or until the ice cream is firm.
  6. When ready to serve, let the ice cream sit at room temperature for a few minutes to soften slightly before scooping.
