Ingredients​

  • 2 cups cooked rice (preferably day-old)
  • 1 cup kimchi, chopped (plus some juice for extra flavor)
  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (like peas, carrots, or bell peppers)
  • 2 eggs (optional)
  • 2-3 green onions, chopped
  • Soy sauce (to taste)
  • Sesame seeds (for garnish)
  • Optional: protein of choice (tofu, chicken, or shrimp)

Instructions​

  1. Prepare the Ingredients: Make sure your rice is cooked and cooled (day-old rice works best). Chop the kimchi and any vegetables you’re using.
  2. Cook the Aromatics: In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent.
  3. Add Vegetables and Kimchi: Stir in the mixed vegetables and kimchi. Cook for about 2-3 minutes until the vegetables are tender and the kimchi is heated through.
  4. Add Rice: Add the cooked rice to the skillet. Use a spatula to break up any clumps and stir everything together. Cook for another 3-4 minutes, allowing the rice to fry slightly.
  5. Add Soy Sauce: Drizzle soy sauce over the rice to taste, and mix well. If you like, add some of the kimchi juice for extra flavor.
  6. Cook the Eggs (Optional): If using eggs, push the rice to one side of the skillet. Crack the eggs into the empty space and scramble them until cooked, then mix them into the rice.
  7. Finish and Serve: Stir in the chopped green onions and remove from heat. Serve hot, garnished with sesame seeds.
