INGREDIENTS​

  • 1/4 cup soy sauce
  • 2 tablespoons toasted sesame oil
  • 2 to 3 cloves garlic, crushed
  • 1 to 2 scallions, chopped
  • 1 1/2 teaspoons grated fresh ginger
  • 1 tablespoon packed light or dark brown sugar
  • 1 teaspoon toasted sesame seeds
  • Pinch freshly ground black pepper
  • 1/4 cup fresh Asian pear juice or puree

INSTRUCTIONS​

  1. Combine 1/4 cup of soy sauce, 2 tablespoons of toasted sesame oil, 2 to 3 cloves of crushed garlic, 1 to 2 chopped scallions, 1 1/2 teaspoons of grated fresh ginger, 1 tablespoon of packed light or dark brown sugar, 1 teaspoon of toasted sesame seeds, a pinch of freshly ground black pepper, and 1/4 cup of fresh Asian pear juice or puree (optional) in a small bowl. Mix thoroughly. Taste and adjust seasoning as needed.
  2. Use the marinade to coat beef short ribs or slabs of extra-firm tofu (drained and pressed). Place the protein in a shallow dish or a zip-top bag, ensuring it is evenly coated with the marinade. Marinate for at least 2 hours and up to a day, turning at least once during marination.
