I made Bibim Guksu the other day, and wow—this dish is a total flavor bomb! 🔥🍜 It’s a cold, spicy, and slightly sweet Korean noodle dish that’s super refreshing and ridiculously easy to make. Perfect for hot days or when you’re craving something light but packed with bold flavors!

Ingredients (Serves 2):

For the Noodles:

  • 200g somyeon (thin wheat noodles)
  • 1 teaspoon sesame oil
For the Sauce:

  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • ½ teaspoon ginger, minced (optional)
  • 1 tablespoon water (to thin out)
For Toppings:

  • ½ cucumber, julienned
  • 1 boiled egg, halved
  • 1 tablespoon sesame seeds
  • 1 teaspoon green onions, chopped
  • 1 teaspoon kimchi, chopped (optional)

Instructions:

  1. Cook the Noodles: Boil the somyeon noodles according to package instructions (usually 3-4 minutes). Drain and rinse under cold water to stop the cooking. Toss with 1 teaspoon sesame oil to prevent sticking.
  2. Make the Sauce: In a bowl, whisk together gochujang, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and water until smooth.
  3. Mix Everything: Toss the cold noodles with the spicy sauce until well coated.
  4. Assemble & Serve: Divide the noodles into bowls and top with cucumber, boiled egg, sesame seeds, green onions, and kimchi if using.
  5. Enjoy! Mix it all up before taking a bite—it’s tangy, spicy, and so addictive!

Conclusion:

This Bibim Guksu is a total game-changer when you need something quick, spicy, and refreshing. 🌶️🍜 The mix of cold noodles with that bold sauce hits just right, and the toppings add the perfect crunch. If you love Korean flavors, you need to try this!
