I made Bibim Guksu the other day, and wow—this dish is a total flavor bomb!


Ingredients (Serves 2):​
For the Noodles:- 200g somyeon (thin wheat noodles)
- 1 teaspoon sesame oil
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or sugar
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- ½ teaspoon ginger, minced (optional)
- 1 tablespoon water (to thin out)
- ½ cucumber, julienned
- 1 boiled egg, halved
- 1 tablespoon sesame seeds
- 1 teaspoon green onions, chopped
- 1 teaspoon kimchi, chopped (optional)
Instructions:​
- Cook the Noodles: Boil the somyeon noodles according to package instructions (usually 3-4 minutes). Drain and rinse under cold water to stop the cooking. Toss with 1 teaspoon sesame oil to prevent sticking.
- Make the Sauce: In a bowl, whisk together gochujang, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and water until smooth.
- Mix Everything: Toss the cold noodles with the spicy sauce until well coated.
- Assemble & Serve: Divide the noodles into bowls and top with cucumber, boiled egg, sesame seeds, green onions, and kimchi if using.
