- 8-10 small cucumbers (Kirby or pickling cucumbers)
- 4 cups water
- 2 cups white vinegar
- 2 tablespoons kosher salt
- 4 cloves garlic, peeled and halved
- 2 teaspoons dill seed
- 1 teaspoon black peppercorns
- 1 teaspoon red pepper flakes (optional)
- Fresh dill sprigs
- Wash cucumbers and cut off the ends. If desired, slice into spears or rounds.
- In a large pot, combine water, vinegar, and kosher salt. Bring to a boil, then remove from heat and let cool.
- Place garlic, dill seed, black peppercorns, red pepper flakes (if using), and fresh dill sprigs in the bottom of each jar.
- Pack cucumbers into the jars, leaving about 1/2 inch of space at the top.
- Pour the cooled brine over the cucumbers, ensuring they are fully submerged. Tap the jars to remove air bubbles.
- Seal jars with lids and refrigerate for at least 24 hours before serving. For best flavor, wait 1 week.
