Ingredients:​

  • 12 oz spaghetti or your favorite pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Lemon slices and fresh basil leaves for garnish

Instructions:​

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the Shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken or vegetable broth, lemon juice, and lemon zest. Bring to a simmer and let it cook for 2-3 minutes.
  4. Finish the Sauce: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes until the sauce thickens slightly. Season with salt and pepper to taste.
  5. Combine and Serve: Add the cooked pasta and shrimp back into the skillet, tossing to coat everything in the sauce. Stir in the chopped basil. Serve immediately, garnished with lemon slices and fresh basil leaves.
