Pasta will never go old!
Ingredients:
- 8 oz (225g) pasta (spaghetti or fettuccine works well)
- 4 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1/4 cup (60ml) extra virgin olive oil
- Salt and freshly ground black pepper, to taste
- Freshly grated Parmesan cheese, for serving
- Chopped fresh parsley, for garnish (optional)
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.
- Prepare the Sauce:
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
- Combine Pasta and Sauce:
- Add the cooked pasta to the skillet with the garlic oil. Toss well to coat the pasta evenly.
- Add Lemon Flavor:
- Add lemon zest and lemon juice to the pasta. Toss again to combine. If the pasta seems dry, add some of the reserved pasta water to loosen it up.
- Season and Serve:
- Season with salt and freshly ground black pepper to taste. Serve hot, garnished with freshly grated Parmesan cheese and chopped parsley if desired.
