Lemon Garlic Pasta

Ingredients:​

  • 8 oz (225g) pasta (spaghetti or fettuccine works well)
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup (60ml) extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Freshly grated Parmesan cheese, for serving
  • Chopped fresh parsley, for garnish (optional)

Instructions:​

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. Prepare the Sauce:
    • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  3. Combine Pasta and Sauce:
    • Add the cooked pasta to the skillet with the garlic oil. Toss well to coat the pasta evenly.
  4. Add Lemon Flavor:
    • Add lemon zest and lemon juice to the pasta. Toss again to combine. If the pasta seems dry, add some of the reserved pasta water to loosen it up.
  5. Season and Serve:
    • Season with salt and freshly ground black pepper to taste. Serve hot, garnished with freshly grated Parmesan cheese and chopped parsley if desired.
