Lobster Thermidor Recipe:
Ingredients:
- 2 lobsters (about 1 1/2 to 2 pounds each)
- Salt and pepper, to taste
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1 cup milk
- 1/2 cup heavy cream
- 1/4 cup dry white wine
- 2 egg yolks
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated Gruyere cheese
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon paprika
- 1/4 cup breadcrumbs
- Lemon wedges, for serving
- Fresh parsley, for garnish
- Preheat your oven to 400°F (200°C).
- Bring a large pot of salted water to a boil. Add the lobsters and cook for 8-10 minutes, or until they turn bright red and the shells are slightly firm.
- Remove the lobsters from the pot and let them cool slightly. Once cool enough to handle, remove the meat from the shells and chop it into bite-sized pieces. Set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, stirring constantly, to make a roux.
- Gradually whisk in the milk, heavy cream, and dry white wine. Cook until the sauce thickens, about 5 minutes, stirring constantly.
- In a small bowl, beat the egg yolks. Gradually whisk in a ladleful of the hot sauce to temper the eggs, then pour the egg mixture back into the saucepan, stirring constantly.
- Stir in the grated Parmesan cheese, grated Gruyere cheese, Dijon mustard, chopped parsley, and paprika. Cook for another 2-3 minutes, or until the cheese is melted and the sauce is smooth and creamy.
- Fold in the chopped lobster meat until evenly coated with the sauce.
- Spoon the lobster mixture into individual ovenproof dishes or a large baking dish.
- In a small bowl, combine the breadcrumbs with a little melted butter until evenly moistened. Sprinkle the breadcrumb mixture over the top of the lobster mixture.
- Place the dishes or baking dish in the preheated oven and bake for 10-15 minutes, or until the breadcrumbs are golden brown and crispy.
- Remove from the oven and let the Lobster Thermidor cool slightly before serving.
- Garnish with fresh parsley and serve with lemon wedges on the side.
