Hey everyone! If you’re looking to get a jump on your holiday cooking, this make-ahead turkey gravy is the perfect solution! It’s rich, flavorful, and will save you time on the big day. Plus, making it ahead means less stress and more time to enjoy your meal with loved ones. Whether you're serving it with roasted turkey or mashed potatoes, this gravy is sure to be a hit! 🎉

Ingredients:

  • 6 large turkey wings
  • 2 medium onions, peeled and quartered
  • 1 cup water
  • 8 cups chicken broth, divided
  • ¾ cup chopped carrots
  • ½ teaspoon dried thyme
  • ¾ cup all-purpose flour
  • 2 tablespoons butter
  • ¼ teaspoon ground black pepper
Instructions:
  1. Preheat your oven to 400°F (200°C).
  2. Arrange the turkey wings in a single layer in a large roasting pan and scatter the onions over the top.
  3. Roast in the oven until the wings are nicely browned, about 1 hour and 15 minutes.
  4. Transfer the wings and onions to a 5-quart stockpot.
  5. Add water to the roasting pan, stirring to scrape up any brown bits from the bottom. Pour this mixture into the stockpot.
  6. Stir in 6 cups of chicken broth, chopped carrots, and thyme. Bring to a boil over medium-high heat.
  7. Reduce the heat to medium-low and let it simmer, uncovered, for about 1 ½ hours.
  8. Remove the wings and let them cool on a cutting board. Discard the skin and set aside the meat for another use.
  9. Strain the stockpot contents through a large strainer into a 3-quart saucepan. Press the vegetables to extract all the liquid, then discard the veggies.
  10. Skim off and discard the fat from the turkey broth, then bring it to a gentle boil.
  11. In a separate bowl, whisk the flour into the remaining 2 cups of chicken broth until smooth.
  12. Gradually whisk the flour mixture into the simmering turkey broth, and continue to simmer, whisking occasionally, until the gravy thickens, about 3 to 4 minutes.
  13. Stir in the butter and black pepper.
  14. Serve the gravy immediately, or pour it into containers to cool before refrigerating or freezing.
