Mango and Avocado Sushi Roll

- 1 cup sushi rice
- 1 ยผ cups water
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 1 tsp salt
- Nori sheets (seaweed)
- 1 ripe avocado, sliced
- 1 ripe mango, peeled and sliced
- 1 small cucumber, julienned
- Soy sauce, for dipping
- Pickled ginger, for serving
- Wasabi, for serving
- Prepare the Rice: Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions. Once done, let it cool slightly.
- Season the Rice: Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Gently fold this mixture into the cooked rice.
- Assemble the Rolls: Place a bamboo sushi mat on a clean surface and cover it with plastic wrap. Lay a nori sheet on the mat, shiny side down. Spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.
- Add Fillings: Arrange avocado slices, mango slices, and cucumber julienne in a horizontal line across the rice.
- Roll the Sushi: Using the bamboo mat, gently roll the nori over the filling, pressing lightly to form a tight roll. Seal the edge of the nori with a little water.
- Slice and Serve: Use a sharp knife to cut the roll into bite-sized pieces. Serve with soy sauce, pickled ginger, and wasabi.
