Mango Avocado Salad with Grilled Shrimp

For the salad:

  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste
For the grilled shrimp:

  • 12 large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
Instructions:

  1. Preheat your grill or grill pan to medium-high heat.
  2. In a bowl, toss the peeled and deveined shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Thread the seasoned shrimp onto skewers, if using.
  4. Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
  5. In a large salad bowl, combine the diced mango, diced avocado, thinly sliced red onion, and chopped cilantro.
  6. Squeeze the lime juice over the salad and toss gently to combine.
  7. Season the salad with salt and pepper to taste.
  8. Arrange the grilled shrimp on top of the mango avocado salad.
  9. Serve your Mango Avocado Salad with Grilled Shrimp immediately, and enjoy the burst of tropical flavors!
