Ingredients:

For the sticky rice:

  • 1 cup glutinous rice (also known as sweet rice or sticky rice)
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
For the topping:

  • 2 ripe mangoes, peeled and sliced
  • Toasted sesame seeds (optional)
  • Additional coconut milk (optional)
Instructions:

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes or up to 4 hours. Drain well.
  2. In a saucepan, combine the drained rice, coconut milk, water, sugar, and salt. Stir well to combine.
  3. Place the saucepan over medium heat and bring the mixture to a simmer. Reduce the heat to low, cover, and cook for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
  4. While the rice is cooking, prepare the mangoes by peeling and slicing them.
  5. Once the rice is cooked, remove it from the heat and let it sit, covered, for about 5 minutes.
  6. To serve, place a portion of the sticky rice on a plate or in a bowl. Arrange some sliced mangoes on top of the rice. Optionally, drizzle with additional coconut milk and sprinkle with toasted sesame seeds for extra flavor and texture.
  7. Enjoy your mango sticky rice warm or at room temperature.
