Ingredients:

  • 1 cup long-grain rice
  • 1 large eggplant, sliced into rounds
  • 2 large potatoes, peeled and sliced into rounds
  • 2 tomatoes, sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 lb boneless chicken, cut into pieces (optional)
  • 2 cups chicken or vegetable broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Olive oil for frying
  • Chopped parsley or cilantro for garnish
Instructions:

  1. Prepare the vegetables: Heat olive oil in a pan and fry the eggplant and potato slices until golden brown. Remove and set aside. In the same pan, sauté the onion and garlic until translucent. If using chicken, add it to the pan and cook until browned.
  2. Layer the ingredients: In a large pot, arrange the tomato slices on the bottom. Layer the fried eggplant and potato slices on top of the tomatoes. Spread the cooked onion, garlic, and chicken (if using) evenly over the vegetables. Sprinkle with turmeric, cumin, cinnamon, salt, and pepper.
  3. Add the rice: Rinse the rice and spread it evenly over the chicken and vegetables in the pot.
  4. Cook: Pour the broth over the rice and vegetables until just covered. Bring to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Serve: Once cooked, carefully invert the pot onto a large serving platter, so the rice is on the bottom and the vegetables and chicken (if using) are on top. Garnish with chopped parsley or cilantro before serving.
  6. Enjoy: Maqluba is traditionally served with a side of yogurt or a simple salad. Enjoy this flavorful and unique Palestinian dish with family and friends!
