Ingredients​

  • 1.5 lbs marble potatoes (baby potatoes in various colors)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary or thyme (or 1/2 teaspoon dried)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions​

  1. Preheat Oven: If roasting, preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes: Rinse the marble potatoes and cut any larger ones in half to ensure even cooking.
  3. Season the Potatoes: In a large bowl, toss the potatoes with olive oil, minced garlic, herbs, salt, and pepper until evenly coated.
  4. Roast (Optional): If roasting, spread the seasoned potatoes in a single layer on a baking sheet. Roast for about 25-30 minutes, or until they are tender and golden brown, tossing halfway through.
  5. Boil (Alternative): If you prefer to boil them, place the potatoes in a pot of salted water. Bring to a boil and cook for about 15-20 minutes or until tender. Drain and return to the pot.
  6. Combine and Serve: If boiled, toss the potatoes with olive oil, garlic, herbs, salt, and pepper. Transfer to a serving dish.
  7. Garnish: Sprinkle with fresh parsley if desired.
