Ingredients:

  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 celery stalks, finely chopped
  • 3 green onions, thinly sliced
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper, to taste
  • Optional toppings: crispy bacon bits, chopped chives, grated cheese
Instructions:
  1. Place the potato chunks in a large pot and cover them with cold water. Add a generous pinch of salt to the water. Bring the water to a boil over medium-high heat, then reduce the heat to medium and simmer the potatoes until they are fork-tender, about 15-20 minutes.
  2. Drain the cooked potatoes and return them to the pot. Mash the potatoes using a potato masher or fork until smooth and creamy.
