Mexican Chicken Pasta is a delightful fusion of Mexican flavors and classic pasta comfort. This dish combines tender chicken, vibrant bell peppers, and a creamy, cheesy sauce with a hint of spice. Ingredients
- 2 tablespoons olive oil
- 1 pound chicken breast, sliced
- 1 tablespoon cumin, divided
- 1 tablespoon chili powder, divided
- ½ teaspoon salt, divided
- 2 bell peppers, sliced
- 4 ounces green chiles, diced
- 8 ounces pasta (fettuccine or your choice)
- ⅔ cup heavy cream
- ⅔ cup milk
- 1 cup cheddar cheese, shredded
- ½ cup mozzarella cheese, shredded
Directions
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken breast and season with half of the cumin, chili powder, and salt. Cook until the chicken is fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Cook the vegetables: In the same skillet, add the sliced bell peppers and diced green chiles. Cook for a few minutes until the peppers are tender.
- Cook the pasta: Meanwhile, cook the pasta according to the package instructions. Drain and set aside.
- Combine ingredients: Return the cooked chicken to the skillet with the vegetables. Add the cooked pasta, heavy cream, and milk. Stir to combine and bring to a simmer.
- Add the cheese: Gradually add the cheddar and mozzarella cheeses, stirring until the cheese is melted and the sauce is smooth. Adjust the seasoning with the remaining cumin, chili powder, and salt to taste.
