- 4 ears of fresh corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup cotija cheese, crumbled (or substitute feta or Parmesan)
- 1 teaspoon chili powder (adjust to taste)
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Salt and pepper, to taste
- Prepare the Grill (or Oven): Preheat your grill to medium-high heat. Alternatively, you can broil the corn in the oven.
- Grill the Corn: Place the husked corn directly on the grill grates. Grill, turning occasionally, until the corn kernels are charred and tender, about 10-12 minutes. If using the oven, place the corn on a baking sheet and broil, turning occasionally, until charred and tender, about 8-10 minutes.
- Prepare Toppings: In a small bowl, mix together the mayonnaise and sour cream (or Mexican crema).
- Coat Corn with Toppings: Once the corn is cooked, brush or spoon the mayonnaise-sour cream mixture generously over each ear of corn.
- Add Cheese and Seasonings: Sprinkle the crumbled cotija cheese over the corn. Then, sprinkle with chili powder, cayenne pepper (if using), salt, and pepper.
- Garnish: Garnish the Mexican corn with chopped cilantro and serve with lime wedges on the side for squeezing over the corn.
