Ingredients:

Tomato Sauce:


  • 6 tomatoes
  • 3/4 cup water
  • 1/4 onion, halved
  • 1 clove garlic
Picadillo:

  • 3 tablespoons vegetable oil
  • 1/2 onion, chopped
  • 1 serrano pepper
  • 1 clove garlic, minced
  • 1 tomato, chopped
  • 2 pounds lean ground beef
  • 1 (7.75 ounce) can Mexican-style hot tomato sauce (such as El Pato)
  • 3 potatoes, peeled and cubed
  • 3 medium carrots, peeled and cubed
  • 1 jalapeno pepper, sliced
  • 2 tablespoons chicken bouillon granules
  • 1/2 tablespoon ground cumin
  • 1 bay leaf
  • Salt and ground black pepper, to taste
Directions:

Prepare the Tomato Sauce:


  1. Place whole tomatoes in a pot and cover with water. Bring to a boil, then transfer tomatoes to a blender using a slotted spoon.
  2. Add 3/4 cup water, halved onion, and garlic to the blender. Blend until smooth and set aside.
Make the Picadillo:

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Cook chopped onion and serrano pepper until onion turns transparent.
  3. Add minced garlic and cook for about 1 minute until fragrant.
  4. Stir in chopped tomato and cook for 1 more minute.
  5. Add ground beef and cook, stirring frequently, until browned and crumbly (about 8 minutes).
  6. Pour in the Mexican-style hot tomato sauce and cook for 2 minutes.
  7. Mix in potatoes, carrots, sliced jalapeño, chicken bouillon granules, ground cumin, and bay leaf. Stir well.
  8. Season with salt and pepper to taste.
  9. Reduce heat to low, cover, and simmer until most of the liquid is absorbed (about 20 minutes). Let sit for 5 minutes before serving.
Enjoy this hearty and flavorful Mexican picadillo with rice, tortillas, or as a filling for tacos!

I made this picadillo last night for dinner and my family loved it! The combination of flavors was spot on. It's definitely going into our regular rotation now.
