  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

  • 1/4 cup dried apricots, chopped
  • 1/4 cup golden raisins
  • 1/4 cup sliced almonds, toasted
  • Fresh cilantro leaves, for garnish
  • Cooked couscous, for serving
Instructions:

  1. Heat olive oil in a large tagine or Dutch oven over medium heat. Add chopped onion and cook until softened and translucent, about 5 minutes.
  2. Add minced garlic to the tagine and cook for another 1-2 minutes until fragrant.
