Ingredients:
Ingredients:
- 2 pounds lamb stew meat, cut into chunks
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cloves
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Salt and pepper, to taste
- 1 can (14 ounces) diced tomatoes
- 1 cup beef or lamb broth
- 1/2 cup dried apricots, halved
- 1/4 cup sliced almonds, toasted
- Fresh cilantro or parsley, for garnish
- Heat olive oil in a large Dutch oven or tagine over medium heat. Add lamb chunks to the pot and cook until browned on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add chopped onion and cook until softened and translucent, about 5 minutes. Add minced garlic and grated ginger to the pot and cook for another 1-2 minutes until fragrant.
- Stir in ground cumin, ground coriander, ground cinnamon, ground turmeric, ground cloves, cayenne pepper (if using), salt, and pepper. Cook for 1-2 minutes until the spices are toasted and fragrant.
- Return the browned lamb to the pot. Add diced tomatoes (with their juices) and beef or lamb broth to the pot, stirring to combine.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer gently for 1.5-2 hours, stirring occasionally, until the lamb is tender and the flavors have melded together.
- Stir in dried apricots and continue to simmer for another 30 minutes, or until the apricots are plump and tender.
- Taste and adjust seasoning with salt and pepper, if needed.
- Remove the tagine from heat and garnish with toasted sliced almonds and fresh cilantro or parsley.
- Serve the Moroccan-Inspired Lamb Tagine hot, accompanied by couscous or warm flatbread.
- Enjoy your fragrant and flavorful lamb tagine, a delicious fusion of Moroccan spices and sweet apricots that will transport you to the vibrant souks of Marrakech with every bite!
