- 1 cup diced tomatoes
- 2 cups beef or lamb broth
- 1 cup dried apricots, halved
- 1/2 cup golden raisins
- Zest and juice of 1 lemon
- Fresh cilantro leaves, for garnish
- Cooked couscous, for serving
- Heat olive oil in a large Dutch oven or tagine pot over medium-high heat. Add the lamb cubes in batches and cook until browned on all sides. Transfer the browned lamb to a plate and set aside.
- In the same pot, add chopped onion and minced garlic. Cook until softened and fragrant, about 3-4 minutes.
- Return the browned lamb to the pot. Stir in ground cumin, ground coriander, ground cinnamon, ground ginger, ground turmeric, salt, and pepper. Cook for another 2-3 minutes to toast the spices and coat the lamb evenly.
