Ingredients:
- 2 New York strip steaks (about 1 inch thick)
- Salt
- Black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, crushed
- Fresh rosemary or thyme sprigs (optional)
- Prepare Steaks:
- Take the steaks out of the fridge about 30 minutes before cooking to bring them to room temperature.
- Pat the steaks dry with paper towels.
- Season generously with salt and black pepper on both sides.
- Heat the Pan:
- Heat a heavy skillet or cast-iron pan over high heat until very hot.
- Sear the Steaks:
- Add the olive oil to the hot pan.
- Place the steaks in the pan and sear for 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness. Avoid moving the steaks around to get a nice crust.
- Add Butter and Aromatics:
- Reduce the heat to medium-low.
- Add the unsalted butter, crushed garlic, and rosemary or thyme sprigs to the pan.
- Tilt the pan slightly and spoon the melted butter over the steaks repeatedly for about 1-2 minutes. This is called basting and adds a lot of flavor.
- Rest the Steaks:
