- 1/4 cup palm oil
- 2 tablespoons ground crayfish
- 2 bouillon cubes
- Salt, to taste
Instructions:
- Soak the black-eyed peas in water for at least 4 hours or overnight.
- Drain the soaked beans and blend with the onions, bell pepper, and scotch bonnet peppers until smooth.
- Transfer the mixture to a bowl and add the palm oil, ground crayfish, bouillon cubes, and salt. Mix well.
- Prepare your steaming containers by greasing them with a little palm oil or lining them with banana leaves.
- Pour the moi moi mixture into the containers, filling them about 3/4 full.
- Steam the moi moi over medium heat for about 45 minutes to 1 hour, or until firm.
