Ingredients:

  • 2 ¼ cups old-fashioned rolled oats (quick oats work too, see notes)
  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 cup very ripe mashed banana (about 2 medium bananas)
  • ½ cup maple syrup
  • 1 cup raisins
Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9 x 9 inch square baking pan and set aside.
  3. In a large bowl, whisk together the oats, flour, salt, baking powder, and cinnamon.
  4. Mix in the mashed banana and maple syrup until well combined.
  5. Fold in the raisins, breaking up any clumps if needed.
  6. Transfer the mixture into the greased pan, pressing it down evenly with your hands or the back of a spoon.
  7. Bake for 25-30 minutes, until the top is firm and golden brown, with darker edges.
  8. Allow to cool before cutting into squares. Store in the fridge or freezer.
